Walla Walla Sweet Onion & Tomato Salad

Pesto Dressing:
  • 1/4 cup extra-virgin olive oil
  • 3 tablespoons red wine vinegar
  • 2 tablespoons homemade or store-bought pesto

Salad:
  • 1 pound of Walla Walla Sweet Onions
  • 1 large (about 3/4 pound) firm, ripe tomato, cored and cut crosswise into 1/4-inch thick slices
  • Fresh basil sprigs for garnish
  • Salt and freshly ground black pepper to taste

To make the pesto dressing, in a small bowl, whisk together the olive oil, vinegar, and pesto; set aside.

Cut the Walla Walla Sweet Onions crosswise into thin slices and separate the rings into a bowl. Pour the dressing over the Walla Walla Sweet Onions and mix gently. Add in the tomatoes and chill.

Yields 4 servings.

Great add-ins: cucumber, mozzarella

 
Steak Salad with Walla Walla Sweet Onions
  • 1 bag Italian salad
  • 1/2 Walla Walla Sweet Onions, thinly sliced into rings (fresh or sautéed)
  • 3 cups fresh baby arugula
  • 12 cherry tomatoes, halved
  • 4 ounces Gorgonzola, coarsely crumbled
  • Red Wine Vinaigrette
  • Salt and freshly ground black pepper
  • 1 pound steak (such as New York, rib-eye or filet mignon), pan-fried or grilled and chilled

In a large bowl, combine the Italian lettuce, Walla Walla Sweet Onion, baby arugula and cherry tomatoes, and half of the cheese. Toss the salad with enough vinaigrette to coat. Season the salad with salt and pepper, to taste. Arrange the salad on a platter.

Cut the steaks crosswise into thin slices. Arrange the steak slices atop the salad and sprinkle with the remaining cheese. Drizzle more vinaigrette over the steak slices and serve.

Yield: 1 2/3 cups

 
Cool Cucumber, Walla Walla Sweet Onion Salad
  • 2 lg. cucumbers, peeled and sliced thin
  • 1 Walla Walla Sweet Onion
  • 1/3 cup apple cider vinegar
  • 5 tbs. water
  • 5 tbs. sugar
  • ½-1 tsp. salt
  • Pepper to taste

Mix Walla Walla Sweet Onion and cucumbers, combine vinegar, water, salt, pepper, & sugar; mix well. Pour dressing over Walla Walla Sweet Onions and cucumbers. Chill until cucumbers are wilted.

 
Fresh Cucumber, Walla Walla Sweet Onion, & Tomato Salad
  • 1 large cucumber
  • 1 Walla Walla Sweet Onion
  • 1 large tomato
  • zesty Italian dressing
  • wine vinegar
  • salt and pepper to taste

Cut up cucumbers, Walla Walla Sweet Onion, and tomato in small cubes. Salt and pepper as desired. Add 1 tbsp wine vinegar.

Add enough Italian dressing to cover (more or less to desired taste). Chill.

 
Spinach Salad
  • 1 bag spinach
  • ½ Walla Walla Sweet Onion
  • 11 oz. can mandarin oranges, drained
  • 1 tbs. bacon bits
  • Balsamic and red wine vinaigrette – to taste

Mix all ingredients together and add vinaigrette to taste.
